vegan bean dips
Today is dd's b-day party, and while dh & I are (mostly) vegetarian, my SIL is vegan. I want to make lots of food she can enjoy, too. I was planning on a veggie tray with 3 different bean dips:
Hummus was one, but I need ideas for the other 2. I wanted to do a variation of this white northern bean dip I usually do. White Northern Beans, mashed Mayo (need substitute!) Diced onion Sweet relish Sea Salt Also, I was hoping to use some of my kidney beans or black beans in another dip. Does anyone have a favorite recipe to share? And can you think of anything I might have in my pantry I can use instead of the mayo for the white northern bean dip? (I wish I had Soyannaise, but no--I was considering just using water or soy milk.) -Julie |

You can probably omit the dressing from the northern bean dip if you use some of the starchy liquid from the can instead. I make mine that way and usually only add some sea salt, pepper, and bit of rosemary. I use my immersion blender or mini food processor to get it creamy but still with a few nice pieces of beans intact. Very simple but yummy.
If you happen to have roasted peppers in a jar, you could add one or two of those to make roasted red pepper hummus for a secondary hummus. Maybe combine black beans with some salsa and sprinkle w/a bit of diced onion for a Mexican style dip? You are so thoughtful to make sure there are choices for your vegan SIL!

Vegenaise is the best mayo substitute. My DH loves the stuff. You might want to see if you can find it for next time. Hope it worked out good for you, I'm sure it was yummy!

The white northern bean dip did turn out pretty well with the bean juice. I don't think it was as well-received by the meat eaters as the hummus was, but all of us vegetarians ate it up!
I'll have to look for the vegenaise. I think Soyannaise has a slight after-taste, although dh likes it, and he's the only one who really eats it. I was thinking though about trying to make my own from soft tofu. I'm all about the homemade stuff right now -- wanting to be more of an "urban homesteader." Thanks for all the tips! -Julie |

i like black bean dip, you drain and puree one can of black beans, add a dash of salsa, and to spice it up you could put in a dash of chili powder. dh puts a dash of pepper in his. its good.

How did it go?
I just use canned black refried beans for a dip. You can mix in salsa or top it with some vegan sour cream and chopped cilantro. I make artichoke dip as well with vegannaise and tofutti cream cheese.

you know quacamole is a good vegan dip. all i use in mine is two avacados, a teaspoon of diced red onion, half a tomato seeded and diced, black pepper, salt and a bit of diced garlic. oh and a couple drops tabasco sauce. it has to sit over night though.

Mine too. It gets brown on top and looks yucky, but tastes fine. We make ours the lazy way. Avocado, lemon juice, garlic powder and salt, all mashed up. Nothing fancy, but we can make it in about 30 seconds.
