Default What kind of sandwiches do you/your kids eat?

We're not veg all the way yet, but definately getting there. But I miss sandwiches! Not really the meat, just the nice bread with lettuce and spicy mustard with a good tomato. I can't just eat that by itself...something would definately be missing! I don't like fake meats, so I can't use those. PB&J only goes so far, you know? LOL

I can't think of any good sandwiches! What's your favorite veg sandwich?

Well, if we have a "lettuce" sandwhich, my older dd and I like to put Vegit on it. The somewhat salty flavoring ads an extra zing of flavor that really helps (IMO). Of course, mustard already adds it's own zing if flavor, so maybe that wouldn't help your situation. Do you like mushrooms? Those can be good on sandwhiches, and grated carrots, too.

Have you tried all the fake meats? like "bologna," "turkey," "salami," etc.? One of my children likes fake salami but doesn't like fake bologna. Another one likes fake bologna, but not fake salami. What I guess I'm saying is that maybe there is one that you will like. ? We try not to eat too much of that, though, but enjoy it as a nice change.

I'm looking foward to hearing more suggestions! I'd love more ideas, too!

Canned sliced beets have to be my favorite sandwich filler.

Roasted veggies..just slice zucchini, eggplant, peppers, mushrooms and saute in a pan. You can soak them in a little braggs if you want first.

"Tuna" salad made from chickpeas.

In the summer we eat more sandwiches and I like to buy all the stuff you can get at Subway. Pepperoncinis are so good on subs

Try different breads, too. You can use dinner rolls, sub rolls or baking powder biscuits.

Oh my, do I love a good sammich! I even eat them for brekkie sometimes!

For ds:

~Grilled avocado (make like a grilled cheese but with fresh avocado thinly sliced, on whole grain bread, cooked in Earth Balance)
~Grilled soy cheese (sometimes with avocado added)
~Pizza sandwich made w/grilled cheese, mushrooms, tad of tomato sauce w/nutritional yeast mixed in
~Grilled cheese and mushrooms (sometimes w/bit of sweet grilled onions)
~Pumpkin butter and jam
~Earth Balance and jam
~Cream cheese and jelly
~Hummus and a little Nayonaise on the bread/pita
~Sunflower butter and sliced strawberries or jam, drizzled with honey before adding second slice of bread
~Almond butter with banana slices and honey, sometimes a few chocolate chips sprinkled in for extra yumminess
~Pita bread with apples, walnuts, mayo and raisins tossed together
~Tortillas with refried beans and grated cheese
~Tortilla pinwheels with cream cheese and jam or almond butter and jam
~Cream cheese with strawberries, almond slivers, drizzle of honey

For grown ups:

(All the above, plus...)

~Hummus and coleslaw piled on whole grain seeded bread (SOOOO yummy, they sell this at Disney for ten bucks - the combination of creamy and crunch is immensely satisfying, may need to eat the second half with fork, tho )
~Veggie bologna (Ives) and cheese (soy or reg in our house) with Nayonaise
~Grilled cheese and tomato slices
~Grilled cheese with grilled onions
~Grilled cheese with tomato slices and few fresh crunchy onion slices
~Crisp, cold veggies piled HIGH - spinach leaves, tomato slices, avocado, onion, lettuce, cuke slices...and a nice drizzle of fave creamy dressing - I add slice of cheese sometimes
~Reubens made with Ives "turkey", saurkraut, 1,0000 dressing on rye or pump and grilled in lots of Earth Balance (dh's fave)
~Lettuce wraps filled w/leftover cold stirfry veggies tossed in Kikkoman's Thai Style Chili Sauce (one of my faves)
~Grilled spinach, mushroom, and cheese
~Avocado and bleu cheese with grape tomatoes
~Cucumber slices, thin layer of cream cheese, and sprinkling of dill
~Roasted eggplant - cold or hot, with Nayonaise on the bread and a few crunchy cold veggies for contrast
~Baba Ganoush (sp?) - creamed roasted eggplant "salad" spread on pita with cucumber and tomato slices
~Veggie burgers on whole grain with Nayonaise, lettuce, tomatoes, sea salt and fresh pepper (I love the "cheeseburger" from Gardenburger, they cook right in the micro in one minute)

Okay, I seriously have to go make a sandwhich now!

Weird but good: cauliflower, cooked til mushy, drain and mash. Add nayonnaise, salt, pepper, a little thyme. Put it in a wrap lined with leaf lettuce and a couple tomato slices.

Nayonaise is a soy alternative to mayonaise. It does not have eggs in it. We use it in our house even though we are not vegan.

One more! I forgot about wraps. I make mine with romaine lettuce leaves or collards. You use the leaf for the wrap instead of bread.

My favorite is thin sticks of apples, thin strips of red bell pepper, pumpkin seeds, feta cheese, raw pumpkin seeds and your favorite dressing. I like the Drew's Garlic. I've thrown in some Tofurkey deli slices before, too.

My big boys don't like them at all, but dh, Escher(2 1/2), and I love them.
