View Full Version : Need a quick but amazing vegetarian main dish

About ten minutes ago, I somehow managed to get myself roped into part of the cooking committee for the yearly dinner put on for the teachers at our elementary school. :giggle The problem? It's tomorrow, my day is pure chaos, and I don't do a ton of vegetarian cooking so no real go-to recipes here.
So...a fairly quick but amazing main dish that could serve, say, 8-10 people? WWYD?

The easiest thing I can think of is Lentil Enchiladas. Make a double batch of this recipe (http://www.tasteofhome.com/recipes/tasty-lentil-tacos)(which has great reviews :tu) then roll into tortillas & top with canned sauce (and optional cheese) and bake at 350 until heated through. I've been making this for years & my meat eating friends love it.

What about a bean soup? You could throw it in the crock pot and it'd be pretty hearty. :think

Yes.
DIY tavo salds, aka haystacks.
For 8-10 people, open up 3 big cans of Brook's chili beans. Add in 2 big cans of regried beans. Stir together in pot while warming.
Cut up 6 tomatoes, get a can of chopped olives, a bag of shredded lettuce, 5 bags of corn chips or tortilla chips. Have a can of sour cream.
Each person can make their own diy from the ingredients you provide.
