I've really gotta start making this stuff myself!

I use one I found searching here on GCM. I think it was from SweetLife??? This is the recipe as I found it:
6 1/2 c oats
2 1/2 c nuts (i use almonds)
1/2 c brown sugar
1/2 c honey
1/2 c coconut oil
1 t vanilla

I do not remember how long she said to bake it for... oh wait, HERE (http://gentlechristianmothers.com/community/showthread.php?t=325636&highlight=vanilla+granola)is it.
Anyways, I half it, and then instead of using the 1/2 t vanilla it calls for, i use 2t:-) Then i put it on one cookie sheet, and bake at 300. 10 minutes, stir, and 10 minutes:-) Delicious!

Thanks! I like how you quadruple the vanilla! From my very limited granola experience, vanilla makes it really yummy!

:shifty a recipe? Heres what I do. Hope you can find a gem hiding in it.

Mix the following in a bowl:
oats (a lot)
seeds- sunflowera medium amount), & flax (just a small amt)- you could use nuts if you want
coconut (mmmmmmmmmmm)

Heat some water with honey (or maple syrup), coconut oil, cinnamon and vanilla until just before boiling. Pour this mixture into your SHALLOW pan (like a roasting pan or cookie sheet... I usually use 2 cookie sheets). Pour the oat mixture on top, coating and pressing it down into the wet mixture. Bake ~300f for ~30mins (I have a convection oven, so you may need to adjust this...) stir (if you want chunks, DONT stir) bake an additional ~20mins.

Very interesting....I've never heard of a granola recipe that consists of boiling the water and sweetener. Might have to try it.

I *think* it makes it crunchier
