I read in an earlier post where someone mentioned making pudding with tofu.....We've tried the Jello brand mixes with rice milk in the past, and it never thickened up. I'm sure tofu would work great (don't know why I haven't thought of it before :shrug) but I'm just not sure exactly how to do it. How much tofu do you add? Can anyone help??? Thanks! ;)

I had a recipe around here somewhere . . . .

well, there's one with soymilk, and one with tofu (I'm sure you could make a vanilla pudding, or other flavor, from this recipe). . . .I've done a "pudding" thing before that was very similar. . I just whipped tofu up in the blender with whatever flavoring (kind of like whipped cream).

"Strawberry Pudding or Pie Filling"
1-1/2 cups firm silken tofu
1-1/2 cups fresh ripe strawberries
1/2 cup sugar or sweetener of your choice
1/4 cup oil
1 Tblsp lemon juice
1 tsp vanilla
Pinch of salt

Combine all ingredients in a food processor or blender and blend until smooth and creamy. Pour into individual serving dishes or baked pie shell and chill overnight.

Peta list jell-o pudding mixes as vegan. I guess you can mix that with the tofu?

Have you googled tofu pudding or tried www.vegweb.com?
