Last night we had Crockpot Coconut Vegetable Curry over sorghum.
Tonight it was Mississippi-style Beef Short Ribs, roasted Brussels Sprouts, and roasted baby potatoes.

Typically, Saturday is Scrounge Night (leftovers).
But I had leftovers for lunch again, so I made Crockpot Thai chicken instead.

Ds20 is making Sunday night dinners going forward. Tonight was fajitas. A few bumps, but dinner was done and yummy.

Tonight was homemade pizza and salad.
Last night was sheet pan chicken with roasted potatoes, carrots, broccoli, cauliflower, asparagus, and zucchini.

Wednesday: Roaster pepper & tomato soup, and grilled cheese sandwiches, raw veggies
Thursday: Thai curry with rice & naan. Friday: homemade pizza, salad Saturday: spaghetti, salad, bread, & birthday cake (youngest's birthday) Sunday: Dh's night to cook but probably leftover curry . |

Last night was tilapia, mashed sweet potatoes, and creamed spinach. Tonight is spaghetti and Caesar salad. Tomorrow night pancakes, bacon, and sauteed apples. Friday, artichoke caper chicken, Parmesan grits, and sauteed zucchini.

Beef stew with radishes and carrots is in the IP. I thought I'd try out a recipe for mashed potatoes in the Crockpot before I actually need it (Thanksgiving, etc.), so that's going, too. Littlest loves mashed potatoes so I made a lot.

We had fajitas on Sunday, so yesterday I made breakfast tacos with the leftover beans and fajita meat (and creamy jalepeno sauce!) and tonight we're having quesadillas.
Monday, I indulged dh and made Chicago Style deep dish pizza. We found a recipe online and made it together. It took about 4 hours. We used to have a place here that served it, but they closed a few years ago and he got a hankerin'! I'll try to post a pic. It was pretty.

Wow! I wish I had tried Chicago style pizza when I was in Chicago last month.
We were too cold to walk all the way to the place that served it, so we just ducked into a different pizza place that served regular pizza. I was in the grocery store a couple of days ago and saw blocks of feta on sale for $3.00, so I bought one to try that baked feta/cherry tomato pasta dish that was trending everywhere a while back. I made it last night, but I added some diced chicken, lots of garlic, and red pepper flakes. It was so, so good. I want to go buy more feta now so I am make it again next month.
