Otherwise there is a coconut cupcake recipe around here that I posted. It is vegan but not low fat.

You mean like... sour cream fudge cake layered with strawberry mousse and engulfed in a light cream cheese frosting?
This was Erin's third birthday cake. (link to pic of whole cake) I've got another recipe around here somewhere that's a chocolate (or was it mocha?) layered with frosting and flavoured meringue (formed in flat layers). oh you've decided i was going to suggest a Chocolate Orange cake (chocolate, i know, but sooooo amazing).
It's AWESOME, but the recipe is in ounces and i'm not sure if you have Terry's chocolate orange outside of the uk, which i use on top?

I'm one of those crazy people who don't like fruit and chocolate together My husband loves those chocolate orange sticks. I tried one and about gagged. For our first valentines day together he got me some beautiful, gourmet, chocolate covered strawberries. I took a bite to be polite, then shared the rest with him and didn't touch any more of them. I'm firmly of the mindset that fruit is delicious, and chocolate is delicious and, except for bananas, never the two shall meet.

I love Cakelady's white cake recipe. Everyone snatches it up--it also makes really good cupcakes.
And ITA about fruit and chocolate and well, fruit and any dessert. You just don't mix business and pleasure.

Well I just removed the coconut lime tea cake from the oven. I always try and make a prototype when I make a cake for the first time. And the results are....interesting.
First it stuck. I've never had a bundt stick before. I greased and floured the pan just like I always do. And this cake was stuck tight. When it did finally try and release it did so in layers Whatever, I was testing flavor today, so I wasn't horribly worried. So I dished some up to my taste testers and sent them to the other room. Huck (3) said "Bee, what is wrong with this cake?" Bee (5) says "I don't know. I think mommy used sand instead of flour. It tastes terrible." And wow. This cake did not taste good! It wasn't bad. And with the glaze it was decent. But the actual cake itself was bland. I might try it again, because I see a lot of potential. But I'm going to double up the lime zest and let the sugar macerate for a couple of days. |
