Favorite Fall Soups/Casseroles?
It's almost Fall, and I am looking for some Fall-type reciepes - yummy vegetarian and vegan soup and casserole recipes. Anyone have any good ones?

I like to use my crockpot a lot. A soup with black beans or squash is really good. I love to make a big pot of veggie soup with brags or tamari and squash. The squash melts down and the two of them make a great "broth"!
Lasagna in the crockpot is really easy and yummy. I use uncooked plain noodles for mine. It cooks in less than 2 hours in mine (but it's a new one and it cooks hot).

Chipotle Red Bean Chili w/ Sweet potatoes
1TB olive oil 1 red bell 1 yellow onion 1/2 TB chili powder (you can use more, dd1 and dh just don't like spicy) 1 clove garlic 2 cubed sweet potatoes 1.5 C water 14oz can diced tomatoes 1 TB finely chopped chipotle chilis (I use canned, easier to get here) cinnamon, salt and honey to taste -In large pot, cook onion, minced garlic and chopped red bell in heated oil, 5min with lid on. Then stir in the chili powder, then diced sweet potatoes until they're coated in spice. -add tomatoes, beans, water, salt, honey, cinnamon, and simmer over med. heat until all flavors are blended (about 20-30 min). -Stir in chipotles (you can add more than recipe calls for it you like spicy...they're fairly mild). -Serve and enjoy! Goes great with cornbread. I usually double this recipe so we can have leftovers...it's even better the second time around. |

Alphabet soup and cornbread is my family's favorite cold weather meal!
8 oz (1/2 box) alphabets 1 lb ground venison or beef OR LENTILS 10 oz frozen mixed veg 4 c. tomato juice 4 c. beef broth (or sub for appropriate amount of water and beef bouillon or veggie broth/bouillon) 1 tsp. dried basil 1 tsp. marjoram 1 tsp salt 1/2 tsp black pepper 1/4 tsp garlic powder In a large pot brown and drain ground meat. Stir in everything except the alphabets. Bring to a boil. Reduce heat and simmer 30 minutes. Add alphabets and simmer another 10 minutes. Serve with cornbread. I posted this with meat in it because I got here from new posts and didn't notice I was in the VEGAN forum. Lentils are a great sub in this recipe!
