I bake chicken tenders seasoned with salt, pepper, and garlic powder and then cut into bite sized pieces. Then I toss them in a homemade Buffalo sauce (equal parts butter and hot sauce melted in saucepan). The salad ingredients are romaine lettuce, Buffalo chicken, pico de Gallo (homemade mix of diced roma tomatoes, red onion, jalapeño, cilantro tossed with salt and red wine vinegar), sliced black olives, shredded cheddar cheese, crumbled blue cheese, real bacon bits, crispy tortilla strips, and homemade ranch (equal parts Mayo and milk with a splash of lemon juice and seasoned with seasoned salt, dried parsley, garlic powder, and onion powder). It’s a weird mix of ingredients but it’s so good together.

Louisiana Hot Sauce. I wanted a salad recipe that closely resembled Chili's Buffalo Chicken salad. Since I'm gluten free and egg free, I just don't crispy coat my chicken before baking like they do before frying. It feels like too much work to do it gluten free and egg free and then coating tends to want to fall off as I cut it in bite sized pieces. And I find I don't miss the crunch because the crispy tortilla strips provide some crunch. But if you don't have the restrictions like I do and want to mess with it, crispy coated chicken is awesome in this recipe.

Jicama is delicious! It's great raw, as in the slaw. We also cube it and add it to regular salads and my kids eat it out of hand just like baby carrots. We sometimes julienne it and add to stir-fry. The skin is rather thick - sometimes you can peel it off like an orange. A serrated veggie peeler usually does a better job than the standard ones. Or just use a paring knife.

The slaw is super simple - I use roughly 3 parts shredded cabbage to one part each shredded carrots and shredded jicama. The dressing is just a basic vinaigrette - olive oil plus rice wine vinegar (because it's milder; I don't like red wine vinegar) and lime juice for the acid components. I add a little onion powder, celery seed, salt and pepper to taste and maybe dijon, if I have it on hand to help it emulsify. Sometimes a bit of cumin or chili powder instead of the celery seed. I usually use half to little more than half oil to acid and mix in a glass jar.

My dh doesn't like the typical mayo-dressed creamy cole slaw, so I started experimenting. You can julienne or shred lots of different veggies for slaw, and it doesn't even need the cabbage (my dh doesn't really like raw cabbage, but he'll eat it here if it's chopped finely enough) depending on what you've got on hand. We've done beets, broccoli, and butternut squash with success. You might want to tweak the seasonings for sweeter veggies. Beets are great with mustard in the dressing.


We had burgers and broccoli tonight. Also peppers and tater tots.
