Chipotle Chili
¼ c flour salt and pepper 3 lb boneless beef chuck, cut into chunks EVOO, 4-6 T 1 ½ t oregano 4 cloves garlic, minced 2 finely chopped red onions 2 cups beef broth or dark beer 1 can chipotle chiles in adobo sauce In Ziploc, combine flour, salt, pepper. Add beef and shake to coat. Reserve excess flour mixture. In frying pan, warm 4 T of the EVOO, add half the beef and cook until evenly browned on all sides, about 10 minutes. Transfer to paper towels and repeat with remaining beef, adding the remaining 2 T EVOO if needed. Transfer to paper towels and then to slow cooker and sprinkle with oregano Return pan to med-high heat, add garlic and all but ½ c of onions, sauté 1 minute. Sprinkle with reserved flour mixture and sauté 1 minute. Stir in broth (or beer) and add the chipotle chiles with their sauce, breaking the chiles up with spoon, raise heat to high, boil, deglaz the pan, stirring to scrape up the browned bits on the bottom. Pour over beef. Cook on high heat 3-4 hours. Spoon chili into bowl and sprinkle with remaining ½ c chopped onion and serve. Great served with the same beer as an accompaniment. |
