Re: Vegan Curry Recipes?
Once you have a good sauce, you can put lots of different things in it. I make a simple curry sauce with coconut milk, water, sugar, salt, and curry powder. Then I might add lentils, split peas, onions, garlic, potatoes, peas, cauliflower, etc. Then eat it as is or serve over rice.

This one:
http://www.nourishingmeals.com/2009/...g-new-mom.html I like to use red lentils and add extra veggies (chunks of potato and broccoli are my favorite)

This is called butter chickpea curry, but there is no butter. There *is* milk, but I am sure you can sub coconut milk or whatever. Oh, and when I made it, I used a blended can of tomatoes instead of the condensed tomato soup. Super tasty. |

Re: Vegan Curry Recipes?
I am really lazy on this one. I was taught how to make real curry by an Indian friend. I still find my method works as well and it is tasty.
I use my crockpot. I toss in veggies like potato, cauliflower, red beans, chickpeas, green beans, lentils...really your favorites. Then I use a jar of curry sauce. My grocery store has a selection. I like to add a can of coconut milk as well. Cook till veggies or beans are done. You may need to add water. I serve it with rice, chopped fresh cilantro, and lime wedges. I sometimes make a mango lasso or mango rice for something sweet to add to it. ---------- Post added at 11:31 PM ---------- Previous post was at 11:25 PM ---------- http://www.amazon.com/Pataks-Masala-...558173&sr=8-12 This is what I am talking about. Sometimes they sell the curry paste. You only use a little bit of paste. There is usually a basic recipe on the jar of paste.

Re: Vegan Curry Recipes?
here's a quickie i use...
Curry in a Hurry 1 tbsp cooking oil (I use coconut oil) 3/4 c. chopped onion (or red onion) 4 garlic cloves (or 1 tsp) 2 tbsp curry paste (I use a little less to suit the little tastebuds in our house) 1 1/2 c. chopped yams/sweet potatoes (peeled)...i like butternut squash better 14 oz. can of coconut milk 1/2 c. broth 1 1/2 c. vegetables (use whatever you have on hand, some examples are green beans, asparagus, cauliflower, peas, snow peas) 1/3 c. salted cashews 覧覧覧覧覧覧覧覧覧蘭 Heat wok, add oil. add onion, garlic, and curry paste. Heat and stir until onions are tender. Add yam, coconut milk and broth. Stir. Bring to a boil. Boil uncovered for 8-10 min, stirring occationally until yam is tender. Add veggies. Stir. Cook, uncovered, for 3-5 min, stirring occasionally. Cook, uncovered, approx. 3 min without stirring until shrimp turn pink. Add cashews. Stir. Add salt and pepper to taste. (I also add a couple tbsp of peanut butter after I put the veggies in) ENJOY!
