Meals in June......
Happy New Month
It's getting colder here in Sydney, Australia so have been making lots of soups and slow cooker meals. Tonight we had Chicken Alfredo with pasta. Everyone loves it and I made a double batch so we can have leftover tomorrow

I am hoping that it will start to warm up so that I feel like eating things other than stews and soups. It has been a very unusually cold spring ( Seattle only had 5 hours at or above 70°F from the beginning of the year untill the end of May) This weekend was the first time we have had windows open.

We had brown butter and mizthyra with gf pasta last night. I sautéed asparagus on the side.
Tonight will probably be lemon chicken with roasted broccoli and potatoes. If I get my act together. Otherwise it’ll be shredded bbq chicken sandwiches. And, yes, I would like it to stop raining! I don’t mind cooler than normal but I would like to see the sun! Sent from my iPhone using Tapatalk

It was warm enough to eat outside tonight ( in long sleeves dh was cold) we had pasta with asparagus, bacon, zucchini I thought it was wonderful the kids didn't think much of it.

I made Minestrone last night with turkey sausages and corn bread on the side.
I'm thinking of putting chicken in the crockpot for tonight. Lemon chicken, maybe? I really want to try to make tiropita, but I have a meeting tonight and desperately need to practice and get some Father's Day sewing done before that, so it might not happen. So perhaps we'll just have broccoli or rainbow carrots to go with the chicken.

My kind mom made a big batch of delicious chili for a crowd I was hosting. We had leftovers which made for a nice baked potato bar one night, and nachos the next.

green chili enchiladas
2 eggs can of green chili sauce, mild or medium based on who you are feeding can of refried beans package of sharp cheddar chesse pre-cooked ground beef, 2 cups whole wheat tortillas mix eggs, sauce, beans in blender layer that with tortillas, cheese, beef bake at 375 for 30 minutes top with cheese cuz it's ugly but easy
