Monday - orange chicken
Tuesday - my birthday- fried shrimp, salid, cole slaw, rice pilaf and hopefully gingerbread. It's going to be a Crockpot/Instant Pot week for us. Tonight they're getting a Cook's Illustrated recipe for Slow cooker Chicken Tikka Masala that I've never tried. We'll see! Last week I made an IP Minestrone from CI and it was just okay. Good, but not company-worthy. I only had soaked, not cooked beans on hand, so I gave it a shot, but I think I would have been happier just cooking the beans in the broth on the stove to start and adding the majority of the veggies halfway or more through. That and it had too much cabbage, not enough tomato for my taste.

Last night we had Air Fryer Cajun Shrimp & kielbasa over brown rice.
Tonight we had Blackened Mahi Mahi with Key Lime Tartar Sauce, Roasted Cauliflower Rice with Garlic and Lemon, and zoodles. Tomorrow will be Air Fryer Chicken Sandwiches and a side salad. DS just finished football and is trying to get on a healthier and lower carb eating path, which I guess will be good for us too.

Today I made turkey pumpkin chili and put it in the crock pot to be ready when people got home at different hours from their activities. It was very good.

Tonight I think they will get a Mississippi Pot Roast from the IP plus some easy veggie TBD. Probably green beans. I might not even cook them, as half of the beans usually get eaten by little sneaks while I'm prepping them anyway. I could just put them on the table in a bowl and see what happens!

The other day I made up a recipe where I put thinly sliced potatoes with the skin on layered in a casserole dish with salt and pepper and gf cream of mushroom soup and shredded parmesan cheese. Then I put thin chicken breasts on top and topped with more soup, salt and pepper, shredded mozzarella and shredded parmesan. It was surprisingly really good! I served it with kale caesar salad. ETA: Oops forgot that I also poured heavy cream over the potatoes so they'd be like scalloped potatoes.
Last night we had potsticker noodle bowls. Tonight I'm planning some kind of fish with parmesan risotto, sauteed green beans, and more kale salad. A bunch of kale at my store is 98 cents and I can usually get two meals out of it. That's some cheap health food!

Tonight is French dip style sandwiches. I made up the sauce.
Sear beef Sauté onions, garlic, ginger in beef broth Add coffee and balsamic vinegar. I usually add red wine but that felt too over the top tonight. IP for 75 minutes. Natural release. I’ll strain the juices and shred the meat. Serve on hoagie rolls or over mashed potatoes. Sent from my iPhone using Tapatalk
