Yes, that sounds like a method problem. Over an hour at 350 would have resulted in good baked potatoes if the the skins were still on. With that much surface area the moisture evaporates pretty quickly and they don't cook through.

If you peel and cut into 8ths next time (either wedges or cubes) and toss with a little olive oil, salt and some herbs, they'll be perfect!

We went on a hike tonight and took pizza rolls for dinner. We make them like cinnamon rolls, but with pizza dough and toppings. I made gf vegan ones for myself and regular for everyone else.

Company dinner tonight: My grandma's bbq brisket, twice-baked potatoes, sauteed green beans, salad with pecans and cherries and feta, peach cobbler with whipped cream, water with lemon.

Tonight we had roasted veggies with cashew sauce and Tuscan chickpeas. The veggies were rosemary potatoes, bell pepper, onion, and cauliflower.

I always see recipes for this and think it sounds simple and yummy but haven't been convinced DH and DS would like it. Is it good? Do you have a recipe you follow?

It's so easy, yummy, and comforting. I use this recipe. The only trouble I have with it sometimes is getting the Parmesan to melt smoothly rather than clumping together. I've found that taking it off the heat to add the Parm a little at a time while stirring seems to help and then put it back on the heat for a minute to fully melt it continuing to stir. Or maybe you'll find a better method and clue me in!

We had pizza yesterday, but I didn't make it. There was a pizza place opening up by us and we were able to make reservations for free food. We ordered easily $140 worth of food (before tax and tip) and we only just paid the tip so the server, who was really great, wouldn't have to work for free. However with those prices, I do not see it being a place we will visit with any regularity, though they do have the best gluten free pizza I have ever had. It is Detroit style pizza, and I am from an hour west of Detroit, so that was cool. They even have delicious plant-based pepperoni.
I do not know what is for dinner tonight. It is my oldest dd's turn to make it tonight so we will see what she makes for us.

Parmesan Tilapia with red pepper sauce, parmesan risotto, asparagus. That was a four pan, one sheet pan, and one appliance meal. Yowza! I usually try to get by with the least pans and appliances that I can.
