Margaret has a friend sleeping over (they are fast askleep Im just awake at 2am LOL) I picked up pizza.
I havent decided on tomorrow. probably a vegetable with chickpea curry.

Yesterday was crockpot beef stew meat with onions and mushrooms in gravy over mashed potatoes with broccoli on the side.
Tonight we go out for dh's birthday.

Last night I was trying to make a ham, rice and veggie thing and ended up burning it so that it was inedible. Ending up baking up a frozen gf pizza and just about burned it too!!!
I'm thinking about making spaghetti and meatballs for tonight.

We had Thai Basil chicken tonight. Pretty easy. GFDF.
Add to crockpot: 1-2 (13.5 oz.) cans coconut milk 8 ounces broth or water (if using 1 can coconut milk) a bag of frozen green beans (added last hour if possible) 6-8 hours on low Meat 2 pounds skinless chicken thighs Chopped Stuff 6 cloves garlic, minced 1 jalapeños, ribs and seeds removed, finely chopped 1 red onion, finely chopped 1 teaspoon fresh ginger, grated Spices 1 1/2 tablespoons yellow curry powder 2 teaspoons salt 1 teaspoon chili powder 1/2 teaspoon pepper 2 tablespoons dried basil Optional Create a slurry by whisking cornstarch with 2 tablespoons cold water in a small bowl or glass. Once smooth, pour slurry into the slow cooker. Serve with rice and veggies.

We had camping leftovers M and T. My husband always grills too many steaks so I just threw together some sides and reheated. I mostly ate the sides to stretch the meat for the boys, and I'm finding I'm leaning to more and more meatless (or meat-low) meals.
On Wed, I made barbacoa taco bowls with a hunk of venison. It would be great with beef too! I love the flavor. We had leftovers Thursday and then I had some leftover raw meat that I made into a stew on Friday. I love the Instant Pot for that kind of thing! Its the busy season so meal plan is at a minimal until summer and this will probably be my last post until then!
Yesterday I made stir fry Tonight is my bike ride so leftover stir fry (and I think theres a little pasta left too) Tuesday is Senior night at track so we all get to eat at the banquet afterwards and ds will pack for his track meet, which is away. Wednesday - Id like to ride because Thur is another track meet. Oh plus Wed kids have soccer rigth after track. So really sandwiches and I guess Im not really cooking until the weekend again.
