?? And meat-y. "Like, you know, Mom that roasty meat you make!" But all of the roasty meat is in the freezer, so it's a two IP dinner from my new favorite cookbook - Mediterranean Beef and Rice Casserole (but with the beef and rice separate for the Resident Picky Eaters) and a salad.

I'm making skillet chicken thighs with bell pepper and onion with quinoa. Probably just for me because no one is here, but we are ripping out our kitchen Friday, so I'll use the leftovers this weekend.

Veggie subs tonight with Jimmy John’s day-old bread (50 cents for a 16 inch loaf- I bought 4) and chips. Lettuce, tomato, pickle, cucumber, avocado, onion, peppers.

Cecilia and I tried a local food truck that does street tacos. So so good. Price was pretty decent too. We each got two tacos, an order of rice we split and two sodas came to $18. Included a topping bar.
I'm glad our weather is finally cooling off enough we can enjoy outdoor dining. I also did groceries today managed to come in under $200 which was honestly pretty impressive because I needed a decent amount of stuff. (It didn't include much household wise though) On the menu for the next two weeks. No particular order 1) crock pot pulled pork with corn on cob side (probably doing this tomorrow) 2) lemon butter angle hair pasta with side air fryer broccoli 3) brown sugar italian chicken with green bean side 4) vegetable lasagna 5)spicy italian vegan sausage with veggies 6) peanut noodles roasted bok choy side 7) cowboy chili side of corn bread 8) orange chicken ( ready made heat and serve kind) over rice with bagged salad 9)mushroom ravioli soup 10) fish sticks Coleslaw and boxed Mac N cheese 11) Korean lentils over rice side of zucchini 12-14 left overs, grab on the go, or breakfast for dinner days. (and that can totally mean people finding cereal to eat) __________________

We had Instant Pot Stuffed Grape Leaves and a Tzatziki Salad (sliced cucumbers tossed in Greek yogurt, garlic, and oregano) for dinner tonight.
I thought the Grape Leaves were super tasty. (The potatoes that cooked between layers of dolmas were exceptional!) I did make a couple of changes to the recipe - used all ground beef, replaced the mint with allspice, used half the olive oil in the filling, and a little less in the broth. There's no salt or pepper in the recipe which I think is a mistake. I used jarred, brined grape leaves, so I thought maybe I wouldn't need it, but the filling could have used a little.

Cubed venison, red potatoes, and onions in a "secret" sauce in the instant pot. Cooked on my back porch because I have no kitchen. It was really good!

We had pizza rolls last night, which is a favorite take-along dinner. Not the frozen ones but you make like cinnamon rolls but with pizza dough and toppings.
