September Meals
What are eating for dinner in September?
Tonight I tried my hand again at chicken fried rice and totally bombed it once again. I think I'm going to have to give up on it. Not one successful attempt. Tomorrow night I'm going to make cacio e pepe.

September Meals
Our fall schedule is WONKY! And there are only 2-3 for dinner now. I’m learning to adjust quantities and have yet to actually meal plan.

So far this week we've had One Pan Green Chicken and Rice (Arroz con Pollo Verde) and Caesar Pasta Salad. It's HOT here so definitely not turning on the oven....it's supposed to be over 100 the next 4 days .

I made the green chicken and rice last night. It was good!
Tonight we are having sausage and sauerkraut, roasted baby potatoes, beets, sautéed cinnamon apples- doesn’t that sound like fall?

Tonight - egg roll in a bowl
Tomorrow - zoodles with alfredo sauce Saturday - shredded beef over potatoes or rice Sunday - falafel Monday - workin on it.

There’s this white woman in my city, married to a Cambodian man who is becoming quite the sensation online for her Cambodian cooking demonstrations. (She goes by the name Hungry Housewife). I love her videos because she shows a lot of recipes I don’t know how to cook but we all love to eat. And this week she did Mee Kha Thung which is one of our favorites and I never thought I would learn how to make it. I always have to order it from a restaurant when we want it. So I made it Saturday and the kids liked it!! (They have pretty high standards so this is a big deal). Sunday I went back to the store for more rice noodles and they were sold out and I went to two more Cambodian stores and they were sold out too because of Hungry Housewife’s video. Haha

Monday was rotisserie chicken and coleslaw from the deli and I added halloumi fries in the air fryer and stuffed pepperoncini peppers. It was different but good!
Tuesday- chiles rellenos, rice, corn Wednesday- jalapeño chicken with peppers, rice, grilled pineapple Thursday- buffalo chicken salads Friday- spaghetti with meatballs, green beans Weekend- chili - I’m so hungry for chili!!!!

tonight Minestra di Fagiolini Verdi (green bean with vegetable soup) super cheap meal but so so good.
with some 9 grain bread Cecilia brought pizza home from work so that will be tomorrow's dinner
