Re: July Dinners
Last night we had gf penne alfredo, broccoli cauliflower mix veggies (remind me not to buy those frozen again ), jalapeno cheddar sausage links.
Tonight we are having company so it's Greek food: Gyros with choice of beef or shrimp with lettuce, tomato, red onion, cucumbers, feta and tzatziki as toppings, yellow lemon rice, hummus with fresh veggies and pita wedges and tortilla chips (for the gf), marinated Greek salad, grapes.

Re: July Dinners
Tonight was Puerto Rican food night (DH is PR).
Tomorrow is pulled pork on buns with sides that I haven’t figured out yet. Love the dry rub but we use our favorite bbq sauce instead of making his. |

Re: July Dinners
Did you make tostones??
We're having a freezer meal tonight - sausage-stuffed mini peppers in the crockpot. Probably an arugula salad to accompany it.

Re: July Dinners
Last night, I made a bolognese sauce by combining ideas from my head plus ideas from a recipe served tossed with gluten free penne and Parmesan. It was really yummy. Hope I can re-create it again.

Re: July Dinners
I have a habit of not writing down recipe experiments and then forgetting what I did the ONE TIME everybody ate it! I hope you have better luck!
We're having meatballs, mashed potatoes, and either glazed carrots or broccoli. Perhaps I should embrace the power of AND.......broccoli AND carrots?!

Re: July Dinners
I’m making broccoli rice and cheese casserole with cauliflower rice instead of actual rice and adding chicken to make it a meal.

Re: July Dinners
Eat out a meal (ds pick for his bday) and Ill probably make Raviolis for lunch (just the pre-package kind).
Tomorrow I may make curry. If I have cans of coconut milk in the pantry - I think I have everything else and after the other Indian food thread I got 2 different options to help make my curry the right spicy. Otherwise something with cauliflower. I need to grocery shop on Monday.

Re: July Dinners
I did not have cans of coconut milk so yesterday I made the curry. Previously, I went to an Indian grocery to get actual indian spices and it was soooo good. I didnt half the recipe I already use and like and half the new spices. Dh and I loved it! It was so good. Ds and dd said ti was too spicy. Ds couldn't eat it.
I also got some actual chili peppers. Maybe Ill do that with the usual mild curry flavoring next time. Tonight is stir fry, I am tryng it with Soba Noodles instead of the rice I usually do.
