Layer corn tortillas with beans, tomatoes, onions, and green enchilada sauce. Top with my favorite yum sauce:
1 c. cashews 2 tbsp corn starch 3 c. water salt to taste Blend in blender (I have a blendtec and I do it on the soup setting, so it blends it up really fine. If you don't have a blendtec or similar blender, run it through a coffee filter) then heat over medium heat for a few minutes until it thickens. The yum sauce is great on anything, including a few things I can think of that you can eat- lentils, nachos, broccoli, and it's also a great base for a creamy vegetable soup, like corn chowder or creamy broccoli. Another favorite meal of mine is aloo gobi. You can leave out the potatoes. Cauliflower, red lentils, coconut milk, curry powder. Coconut milk makes great curries in general. You can make oat flour from gluten-free oats and use it to bake stuff. Try coconut oil for baking as well.

to clarify, the c is casein, not corn, right? This is the first book to come to mind. I'll look for some good recipes tomorrow. Poke me if I take too long. Check the library for the book I linked above. It's a popular book, so I'm sure they'll have it. Scanning through, there are a ton of recipes that will work -- some require some substitution like quinoa for couscous, corn for flour tortillas, etc. but that's totally doable.
I love chickpeas as a sub for chunked chicken.
