Do you have egg sub on hand? If you do, I have one that will work. My kids love them.
1 can black beans
3 eggs
3T oil (I use coconut.
)
1/4 cocoa powder (more if you like. I do about 1/3 cup)
1 t vanilla
3/4 c sugar (sucanat works)
Combine the above in a blender or food processor until smooth.
Add 1/2 cup chocolate chips (if you want. I think they are much better with.)
Pour into a square pan.
Bake at 350 for 30 minutes.
