I make a yummy leek and tomato soup. I get one big leek. Halve it, slice fairly thin (maybe 1/2-1 cm). Sautee till golden brown in a fair amount of olive oil. Add 4-5 roma tomatoes that have been seeded and diced. Let that cook a bit so the tomatoes soften and break down some. Add 3.5-4 cips water or vegetable broth (I do broth, usually just frm a veggie base). Allow to boil some to incorporate and thicken a little. Season with salt and pepper and add some thinly sliced basil. Put some stale cubed bread or some toasted cubed bread in your bowl. Ladle soup over bread. For those who are vegetarian it's good with some romano on top.
