What is your vegetarian repetoire?

I've cooked veg the last four days and I realized: that's all I've got. :doh I need ideas, ladies! Here's mine. Quiche: I always use squash and then the general recipe from Tightwad Gazette. Migas: fried corn tortillas, scrambled eggs with a little picante sauce; serve with cheese and sour cream Pizza Spaghetti Help me out here! |

Rice and beans.
Homemade (or good storebought) tortillas and beans and assorted toppings. Pasta bake. Spaghetti bread. We did chili tonight with this bread. Grilled cheese sandwiches with provolone cheese. :yum |

Indian curry or other Indian inspired foods. We eat it three or four times a week. I try specific recipes sometimes, but for the most part, I understand the flavors of Indian food so I just throw veggies in a pot with spices, simmer and sever over rice.

Mexican style casserole like this Bell peppers stuffed with quinoa and black beans, topped with cheese if you like BBQ baked tofu and mashed potatoes Spinach enchiladas Nachos Stir fry Curry Minestrone with crusty bread Chili and cornbread Pizza with spicy tempeh "sausage" crumbles Mushroom stroganoff I can come back and link recipes if you're interested, when I'mnot on my phone :) |

Wow. I came back to look at this and I'm a little astounded at how far I've come. :jawdrop
My meals right now typically consist of: pinto beans cooked with bell pepper and onion and served with crackers or tortillas veggie fajitas buddha bowls (from Crazy, Sexy Diet) veggie fried rice Veggies and dumplin's (using my grandma's chicken n dumplin's recipe, but subbing veggies for the chicken and hemp milk for the milk) Big salads (they're better with avocado :yes) I'm still doing pizza and spaghetti, but it's vegan now. Also, if everyone else is having meat, I'll have the sides and open a can of vegan baked beans. Occassionally I have a noodle cup or can of soup, but that's pretty rare. L-boogie, could you share the recipe for your mexican style casserole? |
