In the bottom of your instant pot dump a layer of frozen meatballs. Dump a package of pasta on top. I use 1.5 bags from Costco. Pour in a jar of sauce plus a jar kf water. Should be about even with the pasta. Put on lid & seal. Pressure cook for half the time listed on the package. Round down. Release pressure quickly after its done. Stir & serve.

I don't have an instant pot. I know, I know, am I even a soccer mom? But I'm also cheap and hate lots of stuff. I already have a crock pot, rice cooker, egg cooker, blender, toaster, stand mixer . . . I am out of cabinet room for more appliance. Maybe if my crock pot dies Ill upgrade to an instant pot.

Also, one of the soccer players is a vegetarian. Sounds easy though. And yummy.

I hear you on cupboard & counter space. I have a galley style kitchen. My IPs live on the floor, under the window.

I bet you could make it in the crock pot. Similar idea. You'd have to play with how long to cook it.

Pot roast with cabbage and mashed potatoes tonight.
I think someone here shared a recipe for lentil tacos? I made those the other night and they were a big hit. My 7yo ate a TON.

Aren't they so good?

I made hamburgers tonight. I had a cutie for a side and the others had chips and queso.

It will be beef casserole in the Crockpot tonight - the dc have classes/clubs at various times this evening, so it’s easier to have something that keeps hot as we won’t all be eating at once.

I’ve got into the habit of using a packet to make up the sauce/gravy when I’m using the crockpot, as otherwise it’s really watery and doesn’t seem to have much flavour whatever I do. I’d love some tips to thicken the sauce and increase the flavour though, if anyone has any!

Wednesday is pretty much sandwich night. Grilled ham and cheese today I think. I was going to do Reubens but I haven't been to the store and I have regular lunch meat that needs to be used. I might roast some chickpeas with it.

I was in bed sick yesterday, so I did not make any dinner. DH got Wendy's for the kids. They were so excited, LOL.

I am not sure if I am cooking tonight. I feel kind of weak still, even though my symptoms are gone. I was supposed to make something we call "Chicken Palpatine" with basmati rice and peas.

I would love a quiche! I have to put on on the menu for next month.

I was still sick in bed last night, so I did not cook, again. I think the family had Trader Joe's Mandarin Orange chicken. DH brought me a TJ's Paneer Tikka Masala. I am feeling better this morning and no fever, so I am going to try to cook tonight. Homemade Mac and Cheese, and sheet pan smoked sausage and veggies were on the menu.
