Dollar stretching guacamole

Not exactly authentic, but it stretches the guacamole. I was skeptical at first, but it really tastes delicious and nobody noticed the difference

The night before:

1 cup dried lima beans
1/2 cup chopped onion

into a bowl. Add enough water to cover and then let soak overnight.

Next Day:
dump beans & onions into a pot. Bring to a rapid boy, and then simmer for an hour and a half. Drain and Cool

Combine:
3 Tbsp Lemon juice
1/2 tsp salt.
1 Tbsp butter
1/4 tsp cayenne pepper
3 ripe avocados

in a food processor. Add bean mixture and mix until smooth.

Add one chopped tomato and serve

Cool recipe. Our local newspaper had an article in the weekend magazine that included green peas in it's guac recipe. I thought that was interesting way to "hide" more veggies but it would stretch it too.

Neat! I wonder if it would work with other dried beans too. That makes sense!
