This is how I did mine this year.
1. Rinse seeds until all the pulp is gone. 2. Lay seeds out (I would use parchment or wax paper because mine stuck to paper towels) to dry overnight. 3. Preheat oven to 300 degrees 4. Put pumpkin seeds on a sheet pan and toss with just enough olive oil to coat and season however you wish. I used salt, pepper, granulated garlic, onion powder, and a sprinkle of hot sauce. I tossed the seeds on the sheet pan until evenly coated with oil and seasonings. 5. Put seeds in a single layer. 6. Roast for about 40 minutes and then check. 7. I ended up roasting them for 50 minutes.

I put them in the oven and roast them.
Seriously, there's not much that can go wrong unless you burn them. I add salt but nothing else. Sometimes I add rosemary. |

I separate as much pulp as possible and rinse a few times in a colander.
Then I let them soak in water for an hour or overnight Boil them in salty water for ten minutes to help them cook all the way through Drain again and pat with a towel Spread on a roasting sheet and toss with olive oil and kosher salt. Roast on 450 for about 45 minutes or until nice and brown, stirring several times throughout I have a strong aversion to chewy pumpkin seeds and find this method gets them nice and crunchy and cooked all the way through Sent from my iPhone using Tapatalk

I know this is late but I am going to post anyways. I was always intemidating by roasting them untill I carved pumkins with my neighbor who doesn't cook at all. The only thing she ever did in her oven was frozen pizza and pumkin seeds.
Her method is simply grab most if the seeds and put in a bowl. Try to just get seeds, but don't try too hard all the pumpkin is eatable. Toss in some olive oil, or melted butter. Spread them out in a pan ( I suggest lining with parchment paper) sprinkle with salt. Bake for 30 min at 375. Stir them and stick them back in. Turn the oven off at that point so that if they get frogotten they wont burn. I was sitting in the porch with my mom, who was passing out candy and had some kids choose to take some of my pumkins seeds over the candy. Sent from my XT1254 using Tapatalk

That is crummy.
I tried a 24h salt water soak this time, then strained and patted dry, tossed with olive oil, seasoned with Adobo spice from Penzey's ans more salt and baked on a silpat. Crisper than other years. |
