Paul Hollywood's Cornish Pasties (in his British Baking cookbook) are good.

The filling consists of:
1 lg onion
120g swede (Rutabaga)
1 lg floury potato, such as Maris Piper or King Edward (I use russets)
400g Beef skirt (or ground beef works)
50 g butter
salt and pepper to taste

The pastry crust dough is supposed to be a butter and lard dough, but I usually use my go-to pie crust (that I keep in the freezer) that has butter and sometimes vegan shortening.

In this version, you just have to chop everything finely because it goes into the crust uncooked. Dot with the butter and bake. They do bake for a long time - 20 minutes at 200ºC then 30 min at 160ºC.

I've also used the Cook's Illustrated recipe, which is good. It calls for sour cream in the pastry instead of lard or shortening (easier to roll) and adds thyme and garlic to the filling which they also thicken with flour. Not as authentic, but tasty. (Cornish Pasties have protected status, so if you're outside of Cornwall, it's not supposed to be called a Cornish Pasty. So make it how you like!)

Empanadas are good, too!

We make so much stuff w ground beef (some weeks I think we use it too much

I see the vast majority of things we make already posted but I didn’t see
*tex mex soup
*cowboy grub (kinda a skillet chili w rice)
*Big Mac salad (super easy salad that tastes like a Big Mac w no bun)

I will look at my master meal list later.

This also sounds good to dump in lettuce as a wrap! Do you just eat in a bowl?

My dh would love this.

I've made cheeseburger soup. I don't have the recipe handy but the basic idea is broth, ground beef, onions, and cabbage for the main body of the soup. Add grated cheddar cheese and some whole grain mustard. Top with pickle slices. I'm sure there are tons of cheeseburger soup recipes if you search.

Make mini and full sausage rolls and samosas on hand in freezer. Nice to pop out for guests.

Freeze several portions of mince curry to spoon into roti leaves for a quick supper.

For a special meal nothing beats lasagne or boboti.

My two favorite ground beef recipes are these..
Paleo Sloppy Joes from here

and I throw together a stir fry with whatever meat and veggies I have on hand but my fave is ground beef and swiss chard (sub out any veggies),
I brown the beef and season with S&P, LOTS of garlic, some rice wine vinegar, a good big glug of coconut aminos, and a dash of chili flakes. Toss the chard in and let it wilt a little and eat the whole pan yourself LOL
