I remember those! And loads of bite marks.

I bought silicone push up pop molds several years ago on Amazon that have been fantastic for popsicles - the ones with the lids attached. They're a little smaller than standard popsicle molds and can be used for dry snacks in lunchboxes.

I've got these as well, but the kids complain that they can't get the bottom of the popsicle off the stick - it gets stuck in the drip guard. They snap securely into the base, though so they don't fall over in my overcrowded freezer.
Those molds look nice! We have a couple very similar sets, but the lids aren't attached. That's a nice feature! I also never thought of using them for dry snacks! I've seen people send frozen popsicle/smoothies in them and say they are semi-thawed by lunch time, but I was always nervous that they'd leak in the lunch box. (This is me hoping that I will be packing a lunch for ds in the fall! Ha!) I was thinking about getting a more traditional popsicle mold set too, just because they are easier to fill. The skinny molds are fine, but then I have to get them all in a cup and make sure the cup doesn't fall over before they freeze. Once they are frozen, they are easy though. I'm also thinking bigger molds might work better for the coconut milk/strawberry recipe I want to make.

So glad other people remember the bite marked oj popsicle sticks! Such good summer memories. I wouldn't be surprised if my mom still has hers too.

I've been thinking about trying some with gelatin...not as much as jello, but maybe about half the amount recommended for the jello recipes using plain jello with juice. It would add a little protein and body without being dairy. Pectin might be another option for thickening if you avoid gelatin, but I've never used it.

I think the honey/sugar is in your recipe to combat the sourness of the lemon juice, which is in the recipe to keep the fresh fruit from browning. You might be able to substitute a bit of juice with added vitamin C, or maybe orange juice.
