NAK--DH gets a free ham every year from his employer & I need fresh ideas. 21.42 pounds of bone-in ham . . . don't want to waste a scrap! WWYD?

UPDATE: For anybody else who gets the gift of a Christmas ham, here's what I've done with it so far:

1. Brown Sugar Glazed Ham. What a monster! It barely fit our turkey roasting pan.

2. The shreddy parts near the skin that never slice well went into a pan with the glaze and drippings poured over. I defatted it the next day and we took a couple of days to eat it as Pulled Pork Sandwiches. YUMMY.

3. The bone was combined with navy beans and an onion to make a gallon of Ham Bone Soup. This will be portioned into freezer containers and reheated whenever Mommy is too tired to cook.

4. I also saved the skin and assorted fatty and gristly bits. I poured a large can of fat-free vegetarian baked beans into my slow cooker, laid the skin etc. on top, and left them to cook on Low while I made corn bread. I chopped the meat, stirred it into the beans, and discarded the skin (from which the delicous glaze had melted into the beans). Presto: Baked Beans with Ham.

5. Modified a recipe from The Joy: Sauteed a little bit of onion, then added some freshly rinsed shredded purple cabbage (I started with 2 pounds of untrimmed cabbage wedges), a julienned Granny Smith apple, and some honey, red wine vinegar, caraway seeds, and salt. I put 2 cups frozen cubed ham directly on top of the cabbage and let it simmer in a covered pan for 10 minutes, then stirred thoroughly and let it go 40 minutes more with the lid on, until everything was purple and the cabbage was very tender. The juices from the frozen ham kept the cabbage from scorching. Served with homemade whole wheat bread. DH wants this one in rotation and he thinks vegetables are evil! The kids wouldn't touch it, but oh well.

6. Made Gratin Dauphinois (the original Scalloped Potatoes, very simple, very tasty, cheap even with the fancy cheese, Google will turn up some good recipes) with the addition of 4 cups partially thawed diced ham on the bottom of the baking dish. This made the finished dish quite watery, but still very good; next time I will try reducing the milk by 1/2 cup. Served with shredded green cabbage braised with carrots and dill. One kid had Graham crackers for dinner; the other picked the carrots out of the cabbage and had 2 bits of ham. Sigh. Repeated recipe recently with the purple cabbage (meatless) on the side, and they had canned chicken soup for dinner. Sigh again.

7. Used 2 pounds of ham to make an utterly luscious, albeit salty, main dish: put thick slices of ham or ham steaks on a deep layer of sliced peeled potatoes, carrot chunks, sliced celery, and chopped onion sprinkled with caraway seed and black pepper. Spread with a can of cream of celery soup. Crock all day. 30 minutes before serving, stir in 1/2 cup yogurt or sour cream. I bet the cream of celery soup could be replaced with 2 cups thick white sauce plus some celery seed and greens.

Besides the soup, I have 10(?) cups of sliced and cubed ham in the freezer. I sliced what I could; I can dice or julienne the slices if needed. The large cubes can also be cut up or left as is. Will update again when I fix more ham dishes.

My mom always used ham hocks, but I prefer a ham bone and about 3/4 of a pound of ham to 1 bag of beans.

I made an AWESOME (IMHO!) white bean, rosemary, ham (bone) soup last year As I was placing an order for the ham this year, that was what I was thinking of, not the Christmas ham. It was so yummy...It was similiar to this one except I served it with shredded parmesan on top and lots of good bread!! Oh yum...just a few more days!!

Here is a link with a recipe to make your own honey baked ham. I did this for christmas YUM! I also made my own maple syrup so it was super cheap under $10.
