Default If You Had a 21-Pound Turkey . . . UPDATE IN OP

. . . what would you do with it? It's the time of year when turkey is the cheapest meat available, cheaper than some dry beans even, so I bought a 21-pounder and it's defrosting in the fridge. I plan to roast it plain with a side of either mashed jack o' lantern pumpkin seasoned like bread dressing or crustless jack o'lantern pie (that is, pumpkin custard), but I would like some fresh ideas for the leftovers. There are 2 adults and 2 young children in the house.

UPDATE: It's roasting now. Here's my plan so far:

1. The neck is simmering in a saucepan. I plan to pick the cooked neck meat off and refrigerate or freeze for use in Fried Rice or Turkey Soup. The broth will be used with the turkey carcass to make stock tonight; I will freeze most of it and use some in recipes this week.

2. There were two livers in the giblet bag; I refroze them for use in Dirty Rice.

3. The gizzard and heart will make a small dish of Braised Giblets.

4. One turkey breast will be sliced for use in Turkey Sandwiches. I like mine with lettuce and jellied cranberry sauce; he likes his with tomatoes and Miracle Whip. Luckily, tomatoes were on sale this week.

5. Some of the dark meat will be reheated with barbecue sauce and served on wheat hamburger buns.

6. That leaves us pretty well turkeyed out for the week! The rest of the meat will be portioned and frozen tonight; I plan to make 1 or 2 turkey recipes a week off the list y'all have provided, plus my old standbys, until it's gone.

I'd pop it in the oven while frozen -they turn out so moist and yummy that way!

I always make a turkey vegetable soup with some of the leftovers, and we do turkey rolls with some of it (chop up turkey meat, mix it with mayo, chopped onion/celery, salt/pepper and chop a head of lettuce into it - then serve it on grilled buttered toast.)

yep, it's the only way I cook them now (and I cook them about once a month in the winter...) It really cuts down on salmonella worries, too - I don't have to pull my fridge apart and sanitize it after defrosting

I cook it for longer than the site suggests - I usually put my turkey on at 6 am for a noon dinner - I stick it in the oven with seasoning on it, no water, and 6 hours later with no basting or attention it's done, and lots of water for gravy...

We make a soup that I love with left over turkey and turkey pot pie.

Turkey broth and turkey
Roasted red bell peppers (you can get a jar of them - fresh would be hard to find this time of year)
A little corn
Black beans
Cheese
Tortillias
Seasonings (garlic, cumin, paprika, salt, pepper)
with a drop of sour cream when served.
