Strawberry Preserves....
....like summer in a jar!
I just wanted to share how excited I am for canning season to begin. I just put up 7 jars of strawberry preserves. Planning on peach butter, blackberry jelly, pepper jelly, figs (if I can find someone with a fig tree that wants to share), pickles, spaghetti sauce, and salsa this year. What are you going to put up? And do you have a recipe you'd like to share? Please chime in. Blessings, Kelly

We're just coming to the end of the peaches from last year. I've still got a couple jars of apple butter and found one lone jar of tomatoes that was hiding out. I'm planning on:
blueberry jam peach butter (I used your recipe the last two years and everyone loves it so it goes fast!) sliced peaches tomatoes apple butter applesauce I'd like to try blackberry jam this year as well..last year they all got eaten in cobbler

I tend to freeze things more than can, except if I make fruit jams or preserves.
This year I hope to freeze corn and various berries. |

I can't wait to get my hands on some Indian River oranges (we live in NW FL, but folks always go down to Indian River and bring back oranges to sell). I'll use them to make orange marmalade. I'm also wanting to can some salsa from our tomatoes this year, and I want to play around with my corn salsa recipe to see if I would be able to successfully can it. I've never tried before |

I really need to start calculating how many jars of strawberry jam I want to can this year. I like enough to last the entire year plus some for an occasional gift for a neighbor or friend. I also would like to do some peach butter and apple butter to mix it up a bit but will need to play it by ear. OH...and salsa. I am due right around that time though so

I did 10 jars of strawberry jam last night and I'll do a batch of rhubarb jam tonight. Not sure what else I'll do this year. I want to do some pickled roasted red peppers, some salsa, some more jams (wild blueberry, peach, maybe cherry) and I'm not sure what else. Spiced plum butter, maybe? And apple butter.
