Mmm Green Monster Pancakes!

My new favorite Breakfast!!!

Ingredients:

1 cup milk (I used vanilla soy milk)
1/2 cup coconut milk
1 tsp vanilla extract
1 ripe banana
1 cup spinach
pinch of salt
1/2 tsp nutmeg
1 tsp baking powder
1 1/2 cup spelt flour
walnuts for garnish

Directions: In a blender, puree together the first 5 ingredients. In a medium sized bowl, mix together the dry ingredients by hand. Add the wet ingredients to the dry and mix well. Pour onto a pre-greased, pre-heated (medium- low) non stick skillet. Cook on one side until bubbles begin to burst and then flip and cook for another minute.

I made these this morning. They're good - ds had no problem with them because "you can't even taste the spinach - but like many vegan bread/flour recipes, the pancakes were gummy, not at all fluffy.
