Canning need a special recipe?
I'm thinking about canning my homemade salsa. I use quite a bit of salt in it normally. Would I need to change anything about the recipe in order to can it? What can I expect it to be like eating it canned vs. fresh?

yes, probably. My understanding (from my canning classes this summer, as well as the books I have read) it that most fresh recipes do have to be adjusted for the canning process...but I am not expert enough (yet ) to tell you how, exactly.
I am guessing that you could freeze it with no problems, though. |
