Last night we had a skillet quish years ago I it was my go to foe Sunday night dinner. Now I have found that I ether need a bigger skillet or I need to only plan in when dh and I have had a larger lunch than we did yesterday. The whole thing was quickly polished off and everyone was still hungry.

The turkey stock I made is going a long way. This was the second soup I've made with it, taco soup with toppings. We ate while we watched Home Alone with my nephew who had never seen it. He didn't look at his phone once...I'm making a new movie rating system based on this phenomenon.

For lunch we had pasta, with sauce I had in the freezer.

I had a gig (!) last night, so I was gone for homemade pizza night.(Dh made the pizza.) I got leftovers, though and even cold it was super yummy! My pizza had garlic confit, goat cheese, and olives on it.
Tonight I made Butternut Squash soup, popovers, and a side of bacon.

Enchilada potatoes. Basically extra enchilada instead on top of baked potatoes. I needed to bake some potatoes for tomorrow's pot pies.
