Default Butternut squash...my cup runneth over...

So I have tons of butternut squash in the garden. I need some ideas. So far I have tried:

*butternut squash risotto
*will become a "Pumpkin" bread tomorrow
*some will be set aside in the freezer as baby food
*whipped winter squash casserole...oh, brown sugar makes this one good!

Do you have any great ways to help me with my butternuts?

Do you know if the seeds can be roasted like pumpkin seeds?

I've eaten a variety of squash seeds, sometimes even raw. Roasted sounds good for those.

My mom uses butternut squash in place of white potatoes in soups. She's sensitive to white potatoes and thinks they are a good substitute.

Oh, and just leave them on the vine or take them in the house and put them out of the sun in a dry area. They are a winter squash and will last a long, long time.

And have the kids make veggie tales faces on them with washable marker, wipe them off, reuse as many times as you want, and eat them when you're ready. They make for cute face shapes. It helped us to have this motivation to inspect our stock for mold periodically.

And my kids were going to behave perfectly all the time and if they didn't, they'd be Dobsoned, but I was going to Dobson so perfectly that they'd know not to slip up but once or twice because I was going to be sooooooo consistent and awesome and wise.

Make it like a pumpkin pie or look up recipes online. My husband says it's better than pumpkin. It was pretty good the one time my hubby made it and he CAN'T cook!

I also like it cubed and oven roasted with olive oil, garlic and dill weed. Oh, and it mixes into chili very easily when cubed or pureed.

My favorite soup is curried butternut squash, a creamy soup with coconut milk.
