Can I make cookies without eggs?
It is a rainy day here and we want to do some baking...but I have no eggs. And I don't want to go out in the rain to get them.
The recipe calls for one egg. What will happen if I make the cookies and skip adding the egg? |

Yes, you can not use the egg but you need to substitute for it. You can add a few tsp applesauce and increase the baking soda/powder a bit as well.
You can also do 1 1/2 tsp baking powder, 1 1/2 tsp baking soda, and 1 1/2 TBSP oil mixed together to substitute for one egg. You can also use silken tofu (not sure of the amount..perhaps 1-2 tsp?) ***Edited to change the amount of oil above*** Sorry I just looked it up in one of my cookbooks..my memory's not great in the morning apparently lol Last edited by Quietspirit; 08-24-2010 at 07:18 AM. |

2 tablespoons of cornstarch and add in a little extra water to compensate. They'll not be as moist, but you can eat the cookie dough without fear!

So the answer is--not really. They were crumbly and flat. But, I have the perfect base for a cheesecake now!!

I'm sorry they didn't turn out. I make cookies without eggs all the time because one of my children is fatally allergic to eggs. But we typically use either Egg Replacer from EnerG or use silken tofu and a bit of extra baking powder. It is a balance to find, that's for sure.
