Clean Out the Fridge Pasta
16 oz. organic whole wheat penne rigate 16 oz. shrimp, peiled and deveined Boil the pasta first. In the last two minutes the pasta is cooking, throw in the raw shrimp. I also tossed in some onion powder, garlic powder, basil, salt, pepper and oregano. Cook for 2 more minutes. Drain. Then toss the shrimp/pasta with leftover Italian salad dressing, tomato that was about to go bad, leftover parmesean, leftover gorgonzola. Yummmmmmmmm Too bad I will probably never have this exact proportion of ingredients again. *sigh* It was so good. |

Ended up being stroganoff and veggies because we had all the stuff for it in the fridge and freezer.
I need to do something with cauliflower tomorrow... something new I think. |

I clipped this one from GCM and it is called "Crystal's Cauliflower" so I'm thinking Arms of Love must have shared it:
can you cube it and saute it with some cubed potatoes and then add some garlic and curry powder, sea salt and pepper. Throw in a dash of cumin |

Tomorrow is grocery day and we need to clear out the leftovers. When I was little we called it "Fend for yourself" but I guess that's asking too much of my two year olds. They most likely would end up eating all the flax seed and coconut, which is always the first things they go for when rummaging through the cabinets. Or peanut butter dog biscuits.

We were out running errands today. My last errand was Whole Foods so on a whim I grabbed a whole rotisserie chicken, and strawberry spinach salad and quinoa from the salad bar for supper. It was delicious and I didn't have to cook on a busy night.

We had quiche and DH liked it! He had pepper, onion, bison and mozzarella. I had onion, tomato and mushrooms.

Mwai mwai and red stew - a local dish. The red stew is just a really rich tomato dish. The mwai mwai you make by mixing some beans (not sure which type, exactly, but I think a variety would do) with chilli peppers, sweet pepper, onion and garlic and then you blend it all to a paste and put them in little containers before poaching them. We don't have bone marrow/beef or crayfish or egg in ours. And we use fresh tomatoes and chilli peppers. There are lots of recipes out there if you google "moi moi". and youtube videos too. You can also cook them in a muffin pan, or something similar. |

I am getting ready to start salsa chicken in the crock pot. Friends have recommended it, so I am trying it. Basically, you dump these items in your crock pot: chicken, a can of corn (or frozen corn), black beans (or other beans...we have leftover pinto beans so I am going to use them), and a cup or two of your favorite salsa. "Fluff" the chicken and/or de-bone when it is done (if using bone in chicken). Serve over rice or inside of tortillas.
