Box mix I was surprised to see at our little small-town grocery. Hodgson Mills is the brand. It makes 2 8" round cakes or 12-16 cupcakes. No instructions for a 9x13 though, so I don't know if it'd stand up to that big of pan. I did 12 cupcakes plus a custard cup.

Frosting was standard chocolate frosting from the store...used tips to make it "fancy".

Have you tried it before? Doesn't matter what pan I use, I just want it I've subbed oat flour in muffins and they were yummy but crumbly. I might try that with a cake recipe. And if it's too crumbly, I can always just mix the cherries with the cake

No clue what meals today are... I'm sick and lightheaded, almost no clean dishes, and DH spent half the night at the ER for what turned out to be a kidney stone

How did it come out? I have a yellow cake mix, same brand in my pantry. I am scared to use it though, it will be my first attempt at GF baking.

Tonight it's some form of angel-hair-based pasta dish... we don't usually eat pasta but I bought that Barilla Plus stuff at BJ's on a whim last month, and now I forget what to do with it. Maybe pasta carbonara with turkey bacon? I could take out M's before I add the cream and just put df butter on hers...

Never tried it before......

Trying it right now....it's more dense than a regular cake, but not nearly as dense and rich as MIL's flourless chocolate cake she made this weekend. This is more like cake, that was like a really heavy brownie. Both are good...just different.

The box called for almond flavoring....which I think would be delicious for Blackforest Cherry Cake! I was really tempted to make that myself, but ds would hate it...and since it's his birthday cake...I didn't.(have to find a GF and HFCS-free
cherry pie filling, too...)

We are going to the Golden Arches for dinner. DH is out of town, I don't feel like cooking, and Bear's friends go there on Thursday night. The kids will probably have some nuggets and cheeseburgers. I'll have fajitas. I'm trying so hard to drop 10 lbs, and stay away from the fries, but they are so dang good.

I'll be making a wild rice soup (wild rice, carrots, leeks, celery, herbs and spices, etc. in a creamy chicken stock) as soon as I'm done babysitting a big email going off to the press guys. The girls had a different soup for lunch, so I might do some grilled cheese and chopped up tomatoes on the side. I dunno... I'm just in a soup mood today.

We did the carbonara (angel hair + turkey bacon + onion + garlic + peas + heavy cream + parmesan) and it was SUCH a good decision. We started off the meal looking at this enormous bowl of pasta going, "There's no. way. we're going to eat all this." And then we ate every last bit.

We did homemade pizza and Coke tonight. I'm usually not very good with dough in general, but this afternoon it went really well for once (yay me)! I think I need to buy new yeast, though. At least it doesn't matter if pizza crust rises very much.
