Crockpot Pumpkin Oatmeal
I don't know if this should go into Slow cooker or Breakfast But the Breakfast section looks pretty empty!
Crockpot Pumpkin Oatmeal Stir together 1 cup steel cut oats (or 1 1/3 cup for regular old-fashioned oats) 4 cups water 1/2 cup pumpkin puree (canned is fine!) 1/4 cup brown sugar 2 tsp cinnamon 1/2 tsp nutmeg Cook overnight (8 - 10 hours for steel cut, 6 for regular) on low. Serve with a handful of pecans and additional sugar if you'd like. Great source of fiber and Vitamin A!

Re: Crockpot Pumpkin Oatmeal
That sounds wonderful! And what a great way to work in some nice orange veggies for breakfast! I'm printing! Princess LOVES having a nice hot breakfast and I'm so not a morning cooking person. I bet she'd be excited enough to put it in the crockpot herself.

Re: Crockpot Pumpkin Oatmeal
Good information. Now I know how many batches my crockpot will hold! Now to see if I still have that can of pumpkin floating about. If we do this is breakfast in the morning!

Re: Crockpot Pumpkin Oatmeal
sounds great!
just what ARE steel-cut oats, anyway? I hear about them all the time, but have never seen them and don't know what the difference is.
