Need an awesome breakfast casserole recipe to freeze for the birth
Does anyone have a tried and true breakfast casserole recipe that they'd like to share? I want something to freeze up that we can pop in the oven when I'm in labor.
The last time I made baked ziti, but I obviously forgot that every birth I've had has happened in the early morning hours. Baked ziti appealed to no one

Nope. The recipe doesn't even have to be vegetarian. We're good at subbing ingredients.

This is the world's best breakfast recipe. Everyone ALWAYS loves it.
You will need: 1 pound breakfast sausage (maple or sage flavored can be good, if you like) 6-7 eggs half an onion, chopped. 1/2 cup butter, softened a block of cream (or Neufchatel) cheese, softened 2-3 cups cheddar cheese a medium sized bag of tater tots a block of frozen spinach, diced tomatoes, corn (totally optional) Preheat your oven to 350. Brown the sausage with the onion, drain. In a large bowl, beat the eggs, then add the cream cheese and butter and mix them together well. Add about half of the cheddar and any veggies, and mix that in, too. Lastly (and i seriously don't know if the order you add the ingredients even matters), add in the sausage and onion and mix it well. I like to add about a third of the tater tots to that, too, but you don't have too. Line a 9x13 pan with tater tots. Pour in your sausage/egg/cheese mixture. Cover the top of that with any remaining tater tots and the rest of your cheddar. Bake for an hour. Sooooooooo good. I've taken this to several pot lucks and people LOVE it.

Yum!
Have you ever tried freezing it? It seems like all of those ingredients would freeze well. I figured that I'd try a test run of the recipe first anyways.

I've never frozen it, but I've refrigerated it with good results. It goes a LONG way, too. We seriously eat it for every meal for like 3 days. It's soooo good. I imagine it would freeze quite well, though.

Have you checked this awesome blog for 40 Day Postpartum Meal Plan? (She's a mama here too ) Specifically, this breakfast casserole looks really yummy, this Blueberry French Toast Casserole , and this Baked Oatmeal.
