Dd's 15th birthday so the dinner today was by her request. Roasted chicken quarters. Roasted carrots. Mashed potatoes and gravy.
For dessert we had homemade gluten free raspberry cheesecake topped with white chocolate.

We had a make your own pizza bar, and BBQ'd the pizza's on the grill since it was 88 degrees here yesterday! SO yummy. We have guests on Tuesdays, so for dessert I tried these Berry Pizzas with Whipped Ricotta Mascarpone Cheese. They were amazing!

Tuesday: I had a little bit of red beans in the freezer but it was mostly "juice." I sauteed chicken with some liquid smoke, then simmered it in the defrosted red beans. Made coleslaw to go with it.

Last night was chicken Florentine with rice, carrots and salad with lemon dill vinaigrette. Tonight is mediterranean pasta and Greek salad.

Chicken Curry in the Instant Pot tonight with a big salad on the side.
I've been reading a mystery series by Joanne Fluke that has recipes throughout the books and decided to try Easy Fruit Pie (which looks more like a cobbler) for dessert.

"Enchiladas" and a salad.
(In quotes because they were totally NOT authentic! I had leftover taco beef, leftover green chile chicken and some leftover cajun baked tilapia that I rolled into tortillas with cheddar cheese. I made a tomato sauce with some adobo and seasonings and baked them with more cheese on top. I wouldn't do the tilapia again, but the chicken and beef were good.)
