![]() 3 chicken breasts, cooked and diced 5 oz frozen corn 1/2 C chicken broth 1/2 C sliced celery 1 medium onion, cut into thin slices 1/2 C salsa 4 t. cornstarch 1 pkg cornbread mix 1.5 C shredded cheddar cheese 1 8 oz can diced green chilis, drained Combine chicken, corn, broth, celery and onion. Bring to a boil and reduce heat, simmering uncovered for 10 min. Add salsa. Stir 2 T water into cornstarch, and add to chicken mixture until bubbly. Prepare corn bread according to package directions. Pour chicken mix into baking dish, sprinkling with cheese and chilis. Spoon corn bread mix on top. Bake at 425 for 20 minutes. |

Orange Chicken Delight
4 C wide egg noodles 1.5 C chicken broth 1/2 C OJ 2 T cornstarch 1/2 t. fines herbs (absolutely no idea what this means) 2 C diced cooked chicken 1/2 C sliced almonds, toasted Cook noodles until al dente, drain and set aside. In a large saucepan combine chicken broth, oj, cornstarch and fines herbes. Cook and stir till thickened and bubbly, then for an additional 2 minutes. Stir in noodles. Turn into a 2 qt. casserole, bake uncovered for 15 min in a 350 oven. Sprinkle with almonds. Serves 6. |

Sprinkle brown sugar, caraway seed, and pepper over tomatoes. Add chicken, bake in 375 degree oven 1.5 hours or until chicken is tender and browned. I have no words. ![]() |

![]() This crockpot gem is called Souper Chicken. 2 lb. chicken parts 1 rib of celery, washed and roughly chopped 1/4 C flour 1 C milk 1 T fresh basil 1 clove garlic, minced 8 oz tomatoes 2 medium zucchini, cut lengthwise and then diagonally into 1/2 in pieces. Lemon Chicken
Fryer chicken cut into serving pieces 3 T vegetable oil 3 T fresh lemon guice 3 cloves crushed garlic dash of pepper Arrange chicken in a shallow casserole pouring other ingredients over chicken. Cover and bake until tender, about 45 minutes. Uncover and allow chicken to brown for the last 10 minutes. Baste occasionally during cooking. Sprinkle with chopped parsley before serving.
