Spinach for Dinner?
I ended up with a bunch of fresh spinach that is not going into a salad after all. I would like to put it into a one-pot dish, but I'm stumped. Here are the proteins I could put into it:
1 cup dried brown lentils. 1 can baked beans in steak sauce. 1 pound ground turkey. Some eggs. A can of salmon (wild-caught, with bones and skin). I know that no matter what it is, the kids will refuse to eat it and have wheat rolls and apples for dinner, and DH will eat almost anything for love of me but prefers as much meat as possible. I need to use the spinach tonight or it'll go bad. WWYD?

A spinach fritatta?
I used to have a recipe for a spinach potage with chick peas, I bet you could use lentils.

The frittata recipes I turned up all called for something I didn't have, so I dragged out the trusty Joy and did this:
*Baked some brown rice in turkey broth with chopped onions, garlic, butter, and a can of mushrooms. *Cooked the lentils with more onions and garlic and a bay leaf. *Melted some bacon grease, softened chopped carrots in it, added garlic, then poured in the drained lentils along with the spinach and a tablespoon of soy sauce. Stirred well, put on the lid, and left to wilt. Verdict: Eva ate it happily, Sophia had apples for dinner, John said it was tasty even if it was technically meatless , I would cheerfully have it again. Also it helped me clean assorted things out of the cupboard and fridge.

I made chicken soup and put it all in there since the heat shrinks it
I would think chili or a bean soup would be FABULOUS esp if you are trying to hide it from kids

Spinach quiche
This is really good, and my picky/won't eat veggies 3 year old loves it. It also freezes well, so I usually make two and freeze one. |
