Although some of the recipes are kind of fancy, I like Vegan with a Vengeance. Her pancakes, waffles, simple muffins, pizza dough/sauce, desserts and soups are well worth it, IMO. If you decide to get adventurous, then the other stuff is really yummy too
And we love Fresh from the Vegetarian Slow Cooker. That's one of my absolute favorites.

Try the Unplugged Kitchen for simple vegetable recipes, and some unique ones too. I love that book.
And Farmer's Wife's Guide to Vegetables and Fruits- SUPER simple veggie/fruit recipes- the fruit one is mostly desserts, IIRC, but nice fruit based ones. I haven't read the books in years, but I still want them. And The Vegetarian Mother's Cookbook has some simple vegetarian recipes that can be veganized as well. |

I like Laurel's Kitchen for the "basics" - she waxes a little optimistic on what your kids will eat on occasion, however. But it is great because she gives you all the times and water amounts for a bunch of different beans/grains, and you can buy pretty much everything in the recepies at the regular grocery store.
