I would guess that organic whole wheat flour would not be "processed", just milled...

Well, *all* flours are processed. They are milled/ground, which, by definition, makes them processed. But, the wheat that I grind still has the germ and the fiber, which makes it more of a whole food, because nothing was taken out of it, or added to it. *Most* commercial flours have the germ removed. . . .otherwise they go rancid *very* quickly. Most of them have the fiber removed, as well (the bran layers). It totally depends on where you get the flour, as to what they remove from it. . . . . removing these things makes for a much longer shelf life and for a much 'softer' product, which is what everybody tends to want.

You can buy processed flour and separate wheat germ and mix it back through (I nmake pancakes this way) - would that be ok?

It's better, of course. Wheat germ is very perishable, and doesn't last long. If it says it has a long shelf-life, I would look at it suspiciously and ask "why".

No, brown sugar isn't much better. . . it's white sugar with a little molasses mixed in. Blackstrap molasses is actually good for you, though. It contains significant amounts of vitamins and minerals and one tablespoon provides up to 20% of the daily value of calcium, magnesium, potassium and iron. It is actually often sold as a health supplement, as well as added to cattle feed (as a supplement). That's the molasses from cane sugar. It's different when it's from different sources (like beets).

So, would you have to be prepared to grind everything yourself in order to have "good" flour? Because I'm pretty sure I'm not that dedicated to the cause

anything you can do from scratch is going to be healthier for you. How far away from that you move is going to depend on how much time and energy you have

I will say that storing flours in the fridge/freezer will extend their shelf life

And sugar is evil--just is :P

I get mine from shops like Sprouts or Whole Foods. Trader Joe's has gone stuff if you don't need gf flours. Some places will let you order direct from them. There are some stores locally (Mormon run) that will order bulk grains or flours.

Sadly, I'm sure chocolate bars count... but I'm how much sugar there is in 85% pure chocolate... It's all bad (and chocolate has issues of its own :/ ) but if you were only reducing really good quality pure chocolate might work

btw between cutting dairy for baby's eczema (see sig) and cutting sugar I feel like there's nothing left for me to eat that i actually like :/
