Boosting nutrition in pasta salad for toddler
O is 15 months. He loves pasta salad. Any non dairy thoughts on boosting it up.
I made macaroni salad with pasta, vegenaise, red pepper, celery, green onion, apple cider vinegar. He loves it! I didn't think he would do well with it. But, he does. I was thinking avocado, peas, olives..Maybe a super fattening healthy dressing. He is a little guy and any extra calories are great. I think maybe a different pasta, too.

Do you eat eggs? I would add egg yolks for sure.
If not, coconut oil, butternut squash puree, and nutritional yeast are my go to foods for boosting nutrition. |

if you're not opposed to egg, I'd go with Barilla Plus pasta. It's made with mostly chick-pea and is 17g of protein per serving.

We have chickens. I could add eggs. He seems to be fine with them I think. They cause a few of us some major gastro problems. Squash purée would be wonderful. I always keep some on hand, too.

I make Mirepoix with squash instead of carrots, and add it to pretty much everything.
