January Dinners
This thread always inspires me (like stuffed green peppers are now in the rotation, though am not making them this week).
Today - red potato and corn soup (I have half a bag of red potatoes left over).

Friday we had sausage and sauerkraut (a New Year's tradition) with roasted potatoes.
This weekend we had potato soup.

We had different plans for new years but the death of our kitty changed plans.
Jan 1 Caeser Salad, grilled chicken, garlic toast and grapes January 2 tacos Today roast chicken thighs with vegetables and bread or rolls

I need to get back on this thread regularly and actively scout out new recipes to add. Our rotation is getting pretty monotonous.

DD2 is back to virtual learning. I'm salty about it because her school hasn't had any cases. CDC is "suggesting" all school go virtual for our area. The pressure got to them. Not dismissing the seriousness of the virus but clearly they were able to do things right and keep the kids safe (smaller school, limited class sizes, temperature checks, masks, easy ability to do virtual if ANY signs of illness, staggered start and dismissal times etc..
Anyways enough ranting meals.... Monday *today* "Kofta" patties made with ground turkey, sautéd spinach, couscous, (single serving Jasmine rice for low gluten dd2) and fresh strawberries Tuesday- Arroz con Pollo with homemade corn tortillas Wednesday (takeout/dine out day) probably pizza this week haven't decided past Wednesday. This Wednesday is also our big grocery shopping day so I'll need to sit down and do a new menu before then.

I was going to do stir fry but we are backed up on leftovers. So Mexican rice bowls with fresh rice and the first set of leftovers.
Tomorrow was supposed to be leftovers but will do the stir fry if there isn't enough left (we still have the soup/corn bread leftovers too).

I'm planning to make gouda grits with smoky brown butter shrimp and broccoli. The only time available to pick up groceries today was 6-7 pm so I guess we will be eating late!

Heartofjoy - what are vernon shanks? (Or is it a type of cut or a preparation method? Or did Autocorrect change venison? Curious minds!) Also, my kids absolutely love popovers with soup.(The ones that will eat soup, that is. The anti-soup kids just eat the popovers.) Our favorite recipe is here. I usually double it.

Tonight I used some gluten free bread from trader joe's. I have been surprised how there is gluten free bread in the gleening group I am apart of. I normally use my own bread. I just have to make certain to cut it think 12 hours or some before I want to use it so that it can dry out a bit.
