Re: January Dinners
Tonight will be skillet chicken cordon bleu, wild rice pilaf, asparagus, salad with blue cheese dressing.
Tomorrow night we are getting take out from a steak place as I don't think I will feel like cooking. Not only is it the one year anniversary of Hope's death, but also Nathan goes back to college on Saturday so our last meal with him for awhile.

Re: January Dinners
We're having a beef taco bar tonight with rice. (Littlest said, "OH! Homemade Moe's! Yay!" Which is a relief because she's gotten soooooo picky lately.)

Re: January Dinners
Lentil and venison tacos. They were very good. I changed my taco seasoning recently and I'm much happier with my taco flavor

Re: January Dinners
I've been using this recipe.
https://www.tasteofhome.com/recipes/tasty-lentil-tacos/ Tonight I cut the amount of lentils in half and added a pound of ground venison. I halved the chicken broth too but it kept needing more. I also used more of the spices. And I added a little tomato paste. Like a teaspoon or two. (I freeze tomato paste and I was having to hack it out in little slivers ) I've been lazy about tacos for the last several years and had resorted to McCormick taco seasoning. But it's really not as good. We do lots of different kinds of tacos though and these traditional ones were hardly ever in the menu because they just weren't very good. Now that I'm not being so lazy, we're eating them more! And honestly it's still super easy. Sent from my Pixel 3a using Tapatalk

Re: January Dinners
Well . . .I am doing chicken tacos in the crockpot.
Then I was going to do a can of beans with prepackaged taco seasoning (I, too, am a lazy cook!) for dd BUT I have lentils and all those other ingredients, I think I will do that recipe instead. I will do those same spice combo for the chicken tacos too. Because while I am lazy I would also like to be happy about *my* taco flavor and that doesn't seem too much more work at all.

When I first moved to Vermont and bought some lentels at a 'healthfood/vegan' store that looked exactly like the ones I had previously bought from a groshry stores but they cooked up in much less time. I figured out that they were just much much freasher - they can in bulk and the store went though them really fast. Sent from my Pixel 2 XL using Tapatalk
