Oooooh, I want to read this. I am/was a chemist in a former pre-SAHM life . I started baking when I first stopped WOH and loved it - the science of it. It was like using test tubes and bunsen burners, etc. - well not really . I haven't done as much since we drastically reduced gluten and dairy and sugar and virtually all processed food.
