Vegan Curry Recipes?
Help! I am looking for a great, simple, curry recipe - I am sure one of you ladies must have one. Thank You!

subbing for ideas. I have chopped up a potato and cooked with cauliflower, peas, onion, garlic and curry spices and tomato sauce, etc. but curious what others have tried.

Once you have a good sauce, you can put lots of different things in it. I make a simple curry sauce with coconut milk, water, sugar, salt, and curry powder. Then I might add lentils, split peas, onions, garlic, potatoes, peas, cauliflower, etc. Then eat it as is or serve over rice.

This is called butter chickpea curry, but there is no butter. There *is* milk, but I am sure you can sub coconut milk or whatever. Oh, and when I made it, I used a blended can of tomatoes instead of the condensed tomato soup. Super tasty. |

I am really lazy on this one. I was taught how to make real curry by an Indian friend. I still find my method works as well and it is tasty.
I use my crockpot. I toss in veggies like potato, cauliflower, red beans, chickpeas, green beans, lentils...really your favorites. Then I use a jar of curry sauce. My grocery store has a selection. I like to add a can of coconut milk as well. Cook till veggies or beans are done. You may need to add water. I serve it with rice, chopped fresh cilantro, and lime wedges. Sometimes they sell the curry paste. You only use a little bit of paste. There is usually a basic recipe on the jar of paste.
