If you dehydrate food rather than freeze it...
What all do you dehydrate?
How and where do you store it? We are contemplating getting a freezer and/or a dehydrator to preserve the produce from our garden... We have in the garden: Tomatoes Peppers Zucchini Kale Chard Green Beans Beets Carrots(might be able to put them in cool storage) some Cabbage Plan to get at farmer's market: Apples ???

We dry our tomatoes in summer. Just cut them in half, place on baking sheets and leave them on the roof of our shed for a day or 2. (it gets hot here -towards the end of the season it might take a bit longer ) Cover them with muslin to keep the flies off.
I've seen pics of ppl doing the same thing with stone fruit and apples. I imagine a dehydrator would be doing the same thing. I put them in clip top jars-anything airtight would be fine. ETA: My sister dehydrates kale and chard and crumbles into jars. I've heard of someone who transplants chard and Chinese veg into sawdust and stores it in the cellar but I've never done it myself (seeing as it never gets below freezing here and I don't have a cellar ) Last edited by Zipporah; 08-16-2009 at 07:42 AM. |

Friends of ours dehydrate their zucchini and carrots, then use them as chips or just boil them. Peppers are great to throw in soups/salads/dips.
